Isn’t it rather peculiar how darling little memories meander there way into your mind. Present moments that transport you back to a former life of simplicity and wonder. Standing in my kitchen, I had such a moment while making marshmallows.

Memory lane transported me back to third grade. It was the Christmas season and we had gone back to Costa Rica to visit family. I was exploring the second story of my Abuelita’s house and discovering new trinkets when Abuelita gives us girls these (in my child like eyes) most wonderful, colorful, mini marshmallows. Light green lime flavor, light pink strawberry and the classic white. Though my marshmallows aren’t that colorful, the soft yellow and white are still rather charming.

Marshmallows, what a wonderful way to remember a sweet time in my past in a country that I love with people I hold dear to my heart. Now, for those that are interested in making homemade marshmallows, they are super easy. Just make sure not to over mix or you will get a super clumpy batch, edible but a little tough. I recommend a good quality collagen , parchment paper, a quality mixer, and arrow root to keep the marshmallows from sticking.

The best part about making your own marshmallows is that they are healthy, great for your hair, skin, and nails. You can use, sugar, honey, or maple syrup and add pretty much anything you want.
